Ingredients
1½ozChopin Potato Vodka
1ozclementine juice
½ozspicy clementine cordial
¼ozCointreau
¼ozlime juice
2ozFever-Tree Club Soda
Garnish: salt rim
Garnish: rosemary sprig
Spicy Clementine Cordial
8limes peeled and juicedapprox. 4 oz lime juice
4clementines peeled and juicedapprox. 4 oz clementine juice
2-inchpiece of fresh ginger peeled and chopped
6cracked cardamom pods
1Thai chili diced
1½cupsgranulated sugar
Instructions
Run a lime wedge around the rim of a highball glass, then dip the edge into coarse salt.
Add all ingredients to a shaker, excluding club soda, with ice and shake until well-chilled.
Strain into rimmed highball glass over fresh ice.
Top with club soda and stir briefly.
Garnish with a sprig of fresh rosemary.
Spicy Clementine Cordial
Combine all ingredients in a medium saucepan (including all citrus peels) over medium heat. Bring to a low boil, stirring frequently.
Reduce heat to medium low and let simmer for 15-20 minutes until syrup is slightly thickened.
Remove from heat and let cool to room temperature.
Remove solids and fine-strain into an airtight container. Store in the fridge for up to 3 weeks
