Santa Swizzle

Santa took a tropical holiday – this swizzle is airy, bright, and just a little bit naughty. With a split base of nutty amontillado sherry and funky Smith & Cross rum, this swizzle will make you work for your refreshment.

Ingredients

  • oz amontillado sherry
  • 1 oz Smith & Cross rum
  • ¾ oz vanilla pear syrup
  • ¾ oz lime juice
  • Garnish: mint bouquet

Vanilla Pear Syrup

  • 2 cups ripe pears roughly chopped
  • 1 cup water
  • 1 cup granulated sugar
  • 1 cinnamon stick
  • 1 tsp vanilla paste or ½ tsp vanilla extract

Instructions

  1. Add ingredients to a shaker tin with a few pieces of crushed ice. “Whip” (short, hard shake) until just incorporated.
  2. Strain into a Pilsner glass filled with crushed ice.
  3. Insert a swizzle stick or barspoon to the bottom of the glass and roll it briskly between your palms for 8-10 seconds, lifting slightly as you go, until the glass frosts and the drink is well-chilled.
  4. Top with more crushed ice to mound and garnish with a mint bouquet and serve with a straw.

Vanilla Pear Syrup

  1. Combine ingredients in a small saucepan over medium-high heat. Bring to a boil, then turn heat down to medium low. Simmer for 10-15 minutes, stirring occasionally. Remove from heat and let cool to room temperature.
  2. Fine-strain into an airtight container.
