Ingredients
Caramelized Shallot Dip
2tablespoonsolive oil
4large shallotsfinely chopped (about 2 cups)
Kosher saltfreshly ground pepper
1tablespoonwhite wine vinegar
1½cupslow-fat plain Greek yogurt
1tablespoonsliced chivesplus more for serving
Simple crostinichips or crackers (for serving)
Simple Crostini
1baguettesliced 1/4" thick
3/4cupolive oil
Kosher salt
Freshly ground black pepper
Instructions
Caramelized Shallot Dip
Heat oil in a medium skillet over medium. Add shallots and season generously with salt and pepper. Cook, stirring occasionally and reducing heat if needed, until shallots are golden brown and tender, 15–18 minutes. Let cool slightly.
Mix shallots and vinegar into yogurt in a medium bowl; season with salt and pepper.
Stir 1 Tbsp. chives into yogurt; divide among bowls and top with more chives. Serve with chips for dipping.
Do Ahead: Dip (without chives) can be made 3 days ahead; cover and chill.
Simple Crostini
Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil, and season with salt and pepper.
Bake for 6 minutes. Remove from oven, flip and continue baking for another 6 minutes or until golden brown. Let cool on baking sheets.
