Winter Paloma

Ingredients

  • 2 oz tequila blanco
  • 1 oz lime juice
  • ¾ oz spiced cranberry syrup
  • Club soda to top
  • Garnish: smoked rosemary sprig

Spiced Cranberry Syrup

  • 2 cups fresh cranberries
  • cups water
  • cups granulated sugar
  • 1 cinnamon stick
  • 2 strips of orange peel 2-inch thick
  • 1/8 tsp salt

Instructions

  1. Add all ingredients to a shaker, excluding club soda, with ice and shake until well-chilled.
  2. Strain into highball glass over fresh ice.
  3. Top with club soda.
  4. Garnish with a sprig of rosemary lightly singed with a kitchen torch until smoking.

Spiced Cranberry Syrup

  1. Combine ingredients in a small saucepan over medium-high heat. Bring to a boil, then turn heat down to medium low. Simmer for 5 minutes, stirring occasionally. Do not cook longer or the syrup will become jelly.
  2. Remove from heat and let cool to room temperature.
  3. Fine strain into an airtight container.
