Red Wine Hot Chocolate

This might seem like an unexpected winter warmer but if you’ve ever enjoyed a glass of red wine with a quality piece of dark chocolate, you’ll understand the intrinsic appeal of this combo.

Ingredients

  • cups whole milk
  • ½ cup half & half cream
  • 1 oz gingerbread syrup
  • 6 oz 170 g premium 70% dark chocolate, finely chopped
  • 1 tsp pure vanilla extract
  • ¾ cup Merlot
  • Garnish: whipped cream
  • Garnish: dark chocolate shavings

Gingerbread Syrup

  • 1 cup dark brown sugar
  • 1 cup water
  • 2 tbsp fancy molasses
  • 2 tbsp fresh ginger thinly sliced
  • 1 tsp whole allspice berries
  • 1 tsp whole black peppercorns
  • 5 whole cloves
  • 1 cinnamon stick

Instructions

  1. Add milk, cream, and gingerbread syrup to a saucepan over low heat. Bring to a gentle simmer (do not boil) and remove from heat.
  2. Whisk in chocolate, vanilla, and Merlot.
  3. Pour into two mugs.
  4. Garnish with whipped cream and dark chocolate shavings.

Gingerbread Syrup

  1. Combine all ingredients in a small saucepan over medium heat. Bring to a low boil, stirring frequently.
  2. Reduce heat to medium low and let simmer for about 20 minutes until syrup is slightly thickened.
  3. Remove from heat and let cool to room temperature.
  4. Fine strain into an airtight container.
  5. Store in the fridge for up to 1 month.
