Ingredients
1½ozWhitley Neill Blood Orange Gin
¾ozCampari
¼ozwhite port
¾ozhoneythyme & vermouth syrup
¾ozlemon juice
½ozblood orange juice
1egg white or ¾ oz aquafaba
Fever-Tree Premium Club Sodato top
Honey, Thyme & Vermouth Syrup
1cuphoney
1cupdry vermouth
½cupfresh thyme sprigs
Instructions
Add all ingredients to a shaker and dry shake for 15-20 seconds. Add ice and shake again until well-chilled.
Strain into an ice-filled highball glass.
Top with club soda.
Honey, Thyme & Vermouth Syrup
Combine all ingredients in a small saucepan over medium-low heat – do not boil. Stir often until honey is fully incorporated, thyme is fragrant and syrup is thickened – about 10 minutes.
Remove from heat and let cool to room temperature.
Remove solids and fine strain into an airtight container. Store in the fridge for up to 1 month.
