Pomp and Circumstance

A little seasonal spritz made with pomegranate juice, bitter Italian liqueur, persimmon syrup and Prosecco – the perfect cocktail for any festive celebration.

Ingredients

  • oz pomegranate juice
  • 1 oz Campari
  • ½ oz persimmon syrup
  • 3 oz prosecco
  • Splash of Fever-Tree Premium Club Soda
  • Garnish: pomegranate arils
  • Garnish: mint bouquet

Persimmon Syrup

  • ¾ cup water
  • 1 cup granulated sugar
  • 1 cup persimmon chopped

Instructions

  1. Add pomegranate juice, Campari & syrup to a shaker with ice and shake until well-chilled.
  2. Strain into an ice-filled wine glass.
  3. Top with prosecco and a splash of club soda. Stir to combine.
  4. Garnish with pomegranate arils and a mint bouquet.

Persimmon Syrup

  1. Combine all ingredients in a medium saucepan over medium heat. Bring to a low boil, stirring frequently.
  2. Reduce heat to medium low and let simmer for about 15 minutes until syrup is slightly thickened.
  3. Remove from heat and let cool to room temperature.
  4. Remove solids and fine strain into an airtight container. Store in the fridge for up to 2 weeks.
