Jingle Belle

My pear cocktails are a perennial favourite and this year I had the pleasure of crafting a drink with Belle de Brillet. This spirit combines the intense fruitiness of Williams pears, harvested and distilled in the Anjou region with the delicate complexity of Cognac.

Ingredients

  • 1 oz Belle de Brillet
  • 1 oz vodka
  • ½ oz lemon juice
  • ½ oz sage champagne syrup
  • 2-3 oz hard pear cider to top
  • Garnish: pear fan

Sage Champagne Syrup

  • 1 cup champagne
  • 1 cup granulated sugar
  • ¼ cup fresh sage sprigs

Instructions

  1. Add all ingredients (except hard pear cider) to a shaker with ice and shake until well-chilled.
  2. Strain into an ice-filled highball glass. Top with hard pear cider.
  3. Garnish with a pear fan.

Sage Champagne Syrup

  1. Combine ingredients in a small saucepan over low
  2. heat. Stir constantly until sugar is dissolved.
  3. Cool to room temperature. Store syrup in an airtight container in the fridge for up to 1 month.
