Ingredients

  • ½ oz simple syrup
  • 4 raspberries
  • ½ oz The Glenlivet Caribbean Reserve Single Malt Scotch
  • 1 oz Writer’s Tears Copper Pot Irish Whiskey
  • ½ oz pineapple juice
  • ½ oz lime juice
  • 1 egg white
  • 2 dashes Chili Espresso Bitters or other spicy bitters
  • Garnish: 2 mint leaves

Instructions

  1. Add simple syrups and raspberries to a shaker tin. Muddle until jammy.
  2. Add remaining ingredients. Dry shake (without ice) for 15-20 seconds.
  3. Add ice, shake again until well-chilled.
  4. Double strain into a chilled coupe glass.
  5. Garnish with two spanked mint leaves.
