Ingredients

  • oz The Botanist Islay Dry Gin
  • 1 oz dry vermouth
  • ½ oz rosemary syrup
  • 2 dashes orange bitters
  • Garnish: smoked rosemary sprig

Rosemary Syrup

  • 1 cup granulated sugar
  • 1 cup water
  • ¼ cup fresh rosemary sprigs

Instructions

  1. Add all ingredients to a mixing glass and stir over ice until well-chilled.
  2. Strain into a chilled martini glass.
  3. Light a sprig of fresh rosemary on fire, extinguish the flame, and place it on the edge of the glass for a smoky garnish.

Rosemary Syrup

  1. Combine sugar, water, and rosemary sprigs in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until sugar is dissolved. Remove from heat and let sit at room temperature until completely cool.

  2. Remove rosemary sprigs and store syrup in an airtight container in the fridge for up to three weeks.
