Finally, some warm weather. I have been dressing for the temperature it should be instead of the temperature it is. I call this aspirational attire. It’s 12 degrees on May 28? Don’t care, I’m wearing espadrilles and bypassing nylons.
Similarly, I’ve been creating cocktails for the weather I want, not the weather we’ve had.
This Colombian Coral is inspired by a delicious rum my friends brought back for me on their recent trip to Colombia. It’s a delicious bottle of Dictador 12 Year Old rum is incredibly smooth and easy-drinking on it’s own.
Demerara sugar is the predominant flavour on the palate with notes of cherry and a subtle hint of cedar. Unfortunately, you can’t get this exact bottle at the LCBO, but they do carry a Dictator 20 Year Old.
I am perfectly content to drink this rum neat, it’s that good, but I didn’t think that would make for a very interesting blog post. I’ve leaned heavily into the tropical inspiration with this Colombian Corral cocktail. Made with grapefruit juice, lime juice, passionfruit syrup, and blood orange soda, this drink is summer vacation in a glass.
Speaking of vacation, I need one. Do you ever just feel like you’re stuck in neutral? I need to get away and experience a new place/people/culture so I can change my perspective.
When I’m feeling that my perspective/life is getting stale, I find my creative process suffers most. I can’t think of compelling compositions or recipes and I want to subsist on pizza and popcorn. Whenever I go on vacation, it’s like I’m finally looking past what’s right in front of me and being able to look around.
Upon returning home, I’m inspired and come back with fresh eyes and ideas from my travels.
I’m hopeful that I’ll be able to get away before the summer is out but haven’t booked anything yet. My friend and I have long been discussing the prospect of going to Eastern Europe for a few weeks. Keeping my fingers crossed we’ll still be able to do that.

Add rum, grapefruit juice, lime juice, and passionfruit syrup to an ice-filled cocktail shaker. Shake vigorously for 30 seconds. Strain into an ice-filled cocktail glass. Top with blood orange soda. Garnish with dried blood orange slice.
