This cocktail captures the sunshine of Whitley Neill Blood Orange Gin and combines it with freshly squeezed blood orange juice, a squeeze of lemon, bitter Campari, white port for sweetness and complexity, honey, thyme & vermouth syrup to complement the botanicals in the gin, and egg white for a frothy finish.

Blood Orange Gin Fizz
The Whitley Neill family has been crafting spirits since 1762 and their mastery shines through in their Blood Orange Gin with its bright, zesty aromas and flavour of the Mediterranean sun.
- 1½ oz Whitley Neill Blood Orange Gin
- ¾ oz Campari
- ¼ oz white port
- ¾ oz honey thyme & vermouth syrup
- ¾ oz lemon juice
- ½ oz blood orange juice
- 1 egg white or ¾ oz aquafaba
- Fever-Tree Premium Club Soda to top
- 1 cup honey
- 1 cup dry vermouth
- ½ cup fresh thyme sprigs

Add all ingredients to a shaker and dry shake for 15-20 seconds. Add ice and shake again until well-chilled.

Strain into an ice-filled highball glass.

Top with club soda.

Combine all ingredients in a small saucepan over medium-low heat – do not boil. Stir often until honey is fully incorporated, thyme is fragrant and syrup is thickened – about 10 minutes.

Remove from heat and let cool to room temperature.

Remove solids and fine strain into an airtight container. Store in the fridge for up to 1 month.
