Butternut Squash and Chorizo Skewers

Looking to up your cocktail party game? These Butternut Squash and Chorizo Skewers are an infinitely snackable canapé. A fennel and cumin marinade add a nice Mediterranean flair to these bites.

Ingredients

  • 600 g butternut squash
  • 360 g chorizo
  • parsley leaves, to serve

Marinade

  • 2 tbsp olive oil
  • 2 pinches sea salt
  • a pinch coarse black pepper
  • 1/2 tsp ground fennel seeds
  • 1/8 tsp ground cumin

Instructions

  1. Preheat the  oven to 400 degrees F. 

  2. Mix the ingredients for the marinade together in a bowl. Cut the butternut squash into 35 neat cubes, toss in the marinade and then transfer to the prepared baking sheet, making sure there is a little space between each cube of squash.

  3. Cook in the preheated oven for 20 minutes or until the edges are crisp and the squash is cooked through. 

  4. Cut the chorizo into 35 pieces. Skewer through a parsley lead, then the chorizo, then the squash. Serve.
