Ingredients
2ozLyre’s American Malt
4ozhot chocolatepreferably dark chocolate
½ozlime clementine cordial
Garnish: orange twist
Garnish: marshmallow
Lime-Clementine Cordial
8limespeeled and juiced (approx. 4 oz lime juice)
4clementinespeeled and juiced (approx. 4 oz clementine juice)
2-inchpiece of fresh gingerpeeled and chopped
6cracked cardamom pods
1-2Thai chiliesdiced
1½cupssugar
Instructions
Add Lyre’s American Malt and lime clementine cordial to a heatproof mug.
Top with prepared hot chocolate.
Garnish with marshmallow and orange twist. Serve hot.
Lime-Clementine Cordial
Combine all ingredients in a medium saucepan (including all citrus peels) over medium heat. Bring to a simmer, stirring to make sure the ingredients blend together.
Reduce heat to medium low and let simmer for about 20 minutes until syrup is slightly thickened.
Cool to room temperature and strain off solids.
Carefully strain the whole ingredients out of the syrup. Once cool enough to handle, store the lime clementine cordial in a swing top bottle or mason jar and keep in the fridge. Syrup will keep for at least 3 weeks.
