This is a simple serve that allows you to fully appreciate each of the ingredients. Using a bright and spicy Chai Tea like the one I’ve used here from Brew Tea Co. is essential.
I regularly try to incorporate teas into my cocktails because they are great for building flavour, quick and potent infusions on spirits, or syrups. Here are a few cocktails from the archives that incorporate teas in different ways:
We’ve escaped to The Sheldon Manor and I fully intend to enjoy a winter warmer or two by the woodburning fireplace. It will be nice to have a quiet weekend away amidst the total insanity that is December.
As you might imagine, there’s no rest for the wicked in December as I author 24 blog posts, edit and post videos, photos, and cocktail tutorials every day from the 1st to the 24th. Certainly, there will be some work to get done while at the cottage but hopefully a hot tub under the stars, good meals, and board games will offer the spiritual respite I need right now!

Chai Hot Toddy
Add some spice to your life with this Chai Hot Toddy that is guaranteed to warm your hands and your heart. Best enjoyed fireside with a great book.
- 1½ oz brandy
- ¼ oz gingerbread syrup
- ¼ oz orange juice
- 3½ oz Brew Tea Co. chai tea hot
- Garnish: dehydrated orange slice
- 1 cup dark brown sugar
- 1 cup water
- 2 tbsp fancy molasses
- 2 tbsp fresh ginger thinly sliced
- 1 tsp whole allspice berries
- 1 tsp whole black peppercorns
- 5 whole cloves
- 1 cinnamon stick

Add boiling water to a heatproof mug to warm.

Discard hot water. Add brandy, syrup, orange juice to the warmed mug. Stir to combine.

Top with hot brewed chai tea. Stir well.

Garnish with a dehydrated orange slice.

Combine all ingredients in a small saucepan over medium heat. Bring to a low boil, stirring frequently.

Reduce heat to medium low and let simmer for about 20 minutes until syrup is slightly thickened.

Remove from heat and let cool to room temperature.

Fine strain into an airtight container.

Store in the fridge for up to 1 month.
